             Presto! It’s Amazing Pesto

POET’S PRESTO PESTO!
Enjoy on toast with burrata cheese, use as a marinade for baked chicken or simply toss with pasta and serve!
Ingredients:
• 2 cups of fresh sweet basil leaves, packed
• 1/2 cup grated Parmesan cheese
• 1/2 cup olive oil (you can use extra virgin olive
oil if you do not plan to cook with pesto and use only as a garnish)
• 1/3 cup pine nuts
• 1/4 tsp salt, fine
• 1/4 tsp fresh ground black pepper
Directions:
Place all ingredients into a high-speed blender or food processor. Start on low, then turn up to medium until combined. Store in airtight container in the fridge.
Note: If you prefer walnuts, you can substitute the pine nuts for walnuts.
